Our Story
One word, four skylines, and a kitchen that's made everything from scratch from day one.

A name worth guessing.
Skylines Cafe opened its doors for dinner on March 5th, 2007. The name was inspired by changing the decor of the restaurant that was here before. Glass panels were put in to provide some separation between the raised bar area and the dining room.
My landlord asked me what I wanted on those panels. I knew it should be one word with as few letters as possible — easily recognized, easy to remember. I knew it would be American cuisine, but had no clue what to call it. In a roundtable discussion the name Skylines was spoken, and we all agreed it would be perfect.
Now I had something unique for the panels, and easily built the first menu around four cities: San Francisco, New York, Chicago and St. Louis. To this day the panels are a conversation piece, and guests have fun guessing which cities are represented.
Four skylines on the panels.
The same four cities that shaped our very first menu. Next time you're in, see if you can name them all.
Made here, from scratch.
We serve fresh, delicious food made with quality ingredients. All of our salad dressings, soups, sauces and desserts are made in house — using canola oil (no soybean oil), real butter, and Callebaut Belgian chocolate for the desserts, to name a few.
In November 2016 we partnered with Clayton Bakery, who makes the brioche buns for our lamb burgers, regular burgers and crabcake sandwich, the Texas toast for our sandwiches, and our wheat toast.
My mom taught me to bake, and I make the desserts here: Key Lime Pie with an animal-cracker crust, Banana Cheesecake with an Oreo crust, Crème Brûlée made with Bourbon Madagascar vanilla beans, and a flourless chocolate torte that's gluten-free with no sugar added — plus bourbon pecan pie, bread pudding, seasonal cheesecake, German chocolate pie, and a few fun experiments.
The favorites that stay.
A few dishes have been here since day one — our Spinach Salad tossed with apple poppyseed, the Skylines Salad with balsamic vinaigrette, Chicken Salad made with sour cream and dill, and Stuffed Chicken with Dijon Parmesan sauce. Others earned their place along the way: Calamari drizzled with balsamic glaze and honey, beer-battered zucchini wedges with sriracha aioli, Black & Bleu Beef, and Pecan Crusted Swai with tequila lime sauce.
